Psychologist Charles Spence from the University of Oxford noted that wearing noise-canceling headphones can improve taste sensations during the flight. Research from the Fraunhofer Institute has found that some tastes, such as umami, maintain their intensity even at high altitudes. Therefore, it is recommended to choose spicy or salty dishes, such as Mexican food or sushi, to enjoy better taste sensations during the flight.
